For SUPY to deplete inventory correctly from sales, POS items must be linked to recipes. Missing links break the connection between sales and consumption.
When PLUs are not linked:
Sales do not consume inventory
Theoretical consumption is understated
Variance increases artificially
You may notice:
High stock despite strong sales
Items that are used as ingredients are showing zero consumption
Menu engineering reports missing items
In SUPY:
Sales data only drives depletion when PLUs are linked to recipes
Unlinked PLUs are ignored in consumption calculations
Review Sales Import for any Unmapped/Unlinked Sales Items
Validate POS Items mapping frequently
Recheck mapping after menu changes

Go to POS Items mapping
Identify unlinked PLUs
Link each PLU to the correct recipe
Option 2
Go to any partially processed sales import
Map all of the unmapped sales items
Ensure that the sales import has ‘processed’ as status
Always validate PLU links when launching new menus.
